Menu Plan Monday 1/16

Happy Monday!  Today is the first day of my new blog going LIVE!!!  I am so excited about it and can't wait to get back into blogging regularly!  I am starting with one of my favorite things, Menu planning!  Here is where you can see my method to how I create my meal plan, it also includes a PDF of my menu planning sheet.

A goal for our family for the new year, is eating out less (we really didn't eat out too often, but for us it had become more that we liked) so making meals and being prepared is what is going to make this successful! Here is our dinner plans for this week!  

Monday 1/6 - Chicken Parmesan with Pasta and a Simple Salad
Tuesday 1/17- Grilled (indoor) Chicken Salads
Wednesday 1/18- Taco Night. Think we are going to go with Taco Bake this time around....recipe below.
Thursday 1/19-Pizza Roll Ups which is a new recipe for us!
Friday 1/20- Oven Fried Chicken, Potatoes and Broccoli
Saturday 1/21- Sausage Spaghetti with Garlic Bread
Sunday 1/22- Leftover Night.

We love Taco Night, but sometimes it becomes the same meal over and over, so this is a way to change it up a bit!

Taco Bake

Ingredients:
Taco Meat made according to the packet instructions.
Cooking Spray
Tortillas
Shredded Cheese
 Taco Toppings that your family likes
Cook ground meat then add in and follow instructions according to packet directions.
Spray baking dish with cooking spray then start layering.  Tortillas first, then taco meat, then shredded cheese.  Continue to layer.
When finishing layers finish with tortilla and a last layer of cheese. Bake at 350* for 30 minutes.
Add your favorite taco toppings (I am picky and only like lettuce) and ENJOY!

  2. My family loves Mexican. We probably have it weekly - even if I don't plan it! This looks like a recipe I'll have to throw into the mix!

  4. We love Mexican as well. This looks so easy and so good! A lot less fuss than everybody at the table trying to fix their own burritos.
